To make the pancakes, start by melting honey and coconut oil together in a saucepan. Add sourdough starter. Add eggs, mashed banana, and cinnamon. Mix well. Once ingredients have been combined, add in the oats. Cook on a griddle set to 300 degrees for 5-7 minutes on each side. I like to cook them in coconut oil or butter so that they have that golden crisp look. We top ours with our homemade maple syrup. We've done peanut butter before too, and that is great! If you're really in the mood for a sweet treat, these pancakes are really great with 1/4 cup of butterscotch chips mixed in :) Makes about 8 pancakes. Enjoy!
