Mom's Molasses Sugar Cookies

Everyone in my family knows that my mom is the BEST molasses sugar cookie maker.  They are always perfectly cracked with just the perfect amount of spice and sweetness to make them irresistible.  I personally have a special fondness of molasses because it's a sweetener that has been around for many years, making me feel a sense of connection with those who have lived before me.  These cookies really are a great treat that you're sure to fall in love with!
Ingredients:
1/2 cup coconut oil or shortening
1/4 cup butter, softened
1 cup sugar
2 tsp. baking soda
1/2 tsp. ginger
1/2 tsp. salt
1 tsp. cinnamon
1/4 cup molasses
1 egg
2 cups flour

Cream the butter, coconut oil.  Add sugar, molasses, and egg.  Beat well.  Combine dry ingredients and mix into wet ingredients.  Chill 15-30 minutes.  Form dough into balls and roll in sugar.  Bake at 350 degrees for 7-8 minutes or until the cookies are brown and cracked.  Cool on the baking sheet a couple of minutes before moving them onto the wire rack.
