Homestead Cooking:  Vegetable Soup

This fall hearty meal will fill your belly with warmth and goodness!  The rich combination of the vegetables and the chicken broth won't even have you missing the meat.

Ingredients:
  • 1 quart chicken broth
  • 1 quart tomato sauce or tomato juice
  • 1 quart diced tomatoes
  • 5 potatoes, diced
  • 1 pint corn
  • 1 large onion, diced
  • 4 carrots, peeled and sliced
  • 4 stalks celery
  • 1 cup frozen or fresh peas
  • spices to taste:  garlic powder, oregano, basil, seasoned salt 

Add all ingredients to a pot and bring to a boil.  Reduce heat and simmer until all vegetables are tender, around 30-40 minutes.

Serve with fresh homemade sourdough bread to round out this meal!
