There are few more foods that scream summer than the marvelous zucchini. A productive and bountiful plant, the zucchini just seems to give and give....and give, and give, and give. There are many delicious recipes you can use with zucchini- cakes, breads, stir fry, zoodles, casseroles- but none, in my opinion, are quite as tasty as the delicious Italian Zucchini Pie.
This is another one that my mom introduced to me, and I've modified it just a little to meet our family's needs. This dish is one that I look forward to every summer, and once the zucchinis are ready, it's on our dinner table almost weekly! It's simple to make, uses up lots of homestead items, and can be made completely from scratch, which is how we like to do it!

Optional Sourdough Homemade Crust:
Mix all ingredients, kneading as you go. Allow dough to sit covered in a warm place for an hour before using.
Form dough into a circle. Roll out the dough and divide in half. I saved my other half in the freezer for another night, but you could use this to make dinner rolls, pizza crust, or even a small loaf of bread if you'd like!
Use the remaining dough for your crust.
