Looking for a melt-in-your mouth, gooey, butterscotch filled piece of heaven? Then you need to try this recipe. This has been a go-to recipe in our house, and we rarely can keep the cookies on the table long enough to last more than two days. Try them- you can thank me later :)
Directions:
Using a hand mixer, combine sugars, egg, baking soda, butter, and coconut oil. Once combined, add flour 1 cup at a time until incorporated. Stir in butterscotch chips. Form dough into balls and place on cookie sheet. Bake at 375 degrees for 7:50. Yes, that is a strange time...but it has always been the perfect time for me! Leave cookies on the baking sheet for 1-2 minutes before moving them to a cooling rack. This recipe is extremely versatile- try them with pumpkin chips for fall, cinnamon chips in the winter, mint chips with cocoa powder added to the recipe for mint chocolate cookies, or just plain chocolate chips.
