Stuffed Peppers with Greek Yogurt Chicken

Ingredients:
  • 3 green bell peppers
  • 1 cup Greek yogurt
  • 1 cup salsa
  • 3 cups cooked chicken, shredded or cubed
  • 1 small onion, chopped
  • 1 tsp. garlic powder
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. chili powder
  • 1 tsp. cumin
  • 2 cups shredded pepper-jack cheese
  • Fresh chives and parsley (optional)
  • Avocado (optional)

Directions:
Precook the peppers in the microwave by cutting them in half, removing the seeds, and putting them cut side down in a dish with a little bit of water for 5-8 minutes.  

Preheat the oven to 375 degrees.  Slightly grease a 9x13 baking dish; set aside.  Combine the chicken, Greek yogurt, salsa, chopped onion, spices, and 1 cup of the shredded cheese.  Place chicken mixture in each of the 6 pepper halves, cover with remaining cheese, and place in baking dish.  Cover with foil and bake for 30-40 minutes, or until peppers are tender.  Chop up avocado, fresh parsley and chives for topping, if desired.
