Directions: Precook the peppers in the microwave by cutting them in half, removing the seeds, and putting them cut side down in a dish with a little bit of water for 5-8 minutes.
Preheat the oven to 375 degrees. Slightly grease a 9x13 baking dish; set aside. Combine the chicken, Greek yogurt, salsa, chopped onion, spices, and 1 cup of the shredded cheese. Place chicken mixture in each of the 6 pepper halves, cover with remaining cheese, and place in baking dish. Cover with foil and bake for 30-40 minutes, or until peppers are tender. Chop up avocado, fresh parsley and chives for topping, if desired.
